Fruit Salad with Strawberries and Cream

Ingredients

  • 1 pint strawberries, stemmed and halved
  • 1 teaspoon finely chopped fresh mint or ½ teaspoon dried mint
  • ½ teaspoon honey
  • ½ cup light sour cream
  • 2 cups seasonal fresh fruit (blueberries, sliced peaches, kiwifruit, or raspberries)

Instructions

1. Make the strawberry dressing. Place about ½ cup of the strawberries in a blender and puree until you have ¼ cup of smooth strawberry puree. Set the remaining strawberries aside.

2. Mix the dressing. In a small bowl, stir together the strawberry puree, mint, honey, and sour cream until well blended.

3. Assemble the salad. Arrange the reserved strawberries and your choice of seasonal fruits on a plate or in individual bowls.

4. Finish and serve.
