🥝🍓 Fresh Kiwi–Strawberry Salad

A bright, refreshing summer salad that’s as beautiful as it is delicious.

Ingredients

  • 3–4 ripe kiwis, peeled and sliced
  • 1 cup fresh strawberries, hulled and sliced
  • 4 cups mixed greens (spring mix, spinach, or arugula)

Honey‑Lime Dressing (optional but perfect):

  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Prep the fruit. Wash the strawberries and kiwis, then slice them into bite‑sized pieces.
  2. Build the base. Add the mixed greens to a large salad bowl.
  3. Add the fruit. Scatter the sliced strawberries and kiwis over the greens.
  4. Make the dressing. Whisk together honey, lime juice, lime zest, olive oil, and a pinch of salt until smooth.
  5. Dress and toss. Drizzle the dressing lightly over the salad and toss gently to coat everything evenly.
  6. Serve immediately. This salad is best enjoyed fresh while the greens are crisp and the fruit is chilled.
